Fruit Strudel

Crust:
2 eggs
2 tbsp water
¼ cup + 2 tbsp oil
¼ tsp soda
1 tsp vinegar
2 tbsp sugar
2 1/4 cups flour

Filling:
2 apples
½ cup raisins
½ cup crushed walnuts
¾ cup date spread or fresh dates

For baking:

2 tsp oil
cinnamon

1. Mix crust ingredients to form a firm dough ball.
2. Separate into 4 equal pieces. With lots of flour, roll each piece out into a rectangle (the dough should be very thin).
3. Mix filling ingredients and place ¼ of filling along the long side of the rectangle. Roll up, tuck in the ends and place on a cookie sheet covered with baking paper. Repeat with the rest of dough and filling.
4. Drizzle 2 tsp of oil over the rolls and sprinkle with cinnamon.
5. Place into a hot oven (175 C – 350 F). Bake for 10 minutes. Brush with juices in the pan. Return to the oven for 30 minutes.
